Ingredients:
- 2 beets (peeled and cubed or cut into wedges)
- 1 white onion
- 1 garlic clove
- Zest of 1 lime
- ½ stick of Nivartana cinnamon
- 1 ½ teaspoons Nivartana Ceylon curry powder
- ⅓ teaspoon Nivartana turmeric
- ½ teaspoon Nivartana black pepper (ground)
- 250 ml coconut milk
- 150 ml water
- Salt to taste
Preparation:
1.Prepare the beetroot: Peel the beets and cut them into wedges or cubes, depending on your preference.
2.Chop the onion and garlic: Finely chop the onion and garlic (brunoise).
3.Sauté: Heat some oil (e.g., coconut oil) in a pot or pan and sauté the onion and garlic over medium heat until they are soft and lightly golden.
4.Add beetroot: Add the chopped beetroot and mix everything well. Sauté for about 5 minutes over medium heat until the beetroot begins to brown slightly.
5.Add spices and liquid: Add the spices (curry powder, turmeric, black pepper, cinnamon) and mix everything well. Then add salt and water, stir, and let it simmer for about 4 minutes over medium-high heat.
6.Stir in coconut milk: Add the coconut milk, stir well, and let it simmer for a few minutes to allow the flavors to combine.
7.Taste and add lime: At the end, stir in the lime zest and taste the curry. Adjust with more salt or spices if necessary.
