Ingredients:

●      300g Basmati rice

●      450 ml water

●      1/2 tsp Nivartana Blue Butterfly Pea Powder

●      8g salt

●      1 cardamom pod

●      Garnish: toasted cashews, peanuts, pumpkin seeds (optional)

Instructions:
  1. Prepare the leeks: Thoroughly wash the leeks, trim the ends, and slice them into thin strips.
  2. Sauté the onions: Heat some oil in a pan and slice the red onion into thin rings. Sauté the onion in the oil over medium heat until it becomes translucent.
  3. Add the leeks: Add the prepared leeks to the pan with the onions and mix well.
  4. Add the spices: Add the Veggie Masala, turmeric, cinnamon, salt, and pepper to the leek-onion mixture. Stir well to ensure the spices are evenly distributed.
  5. Cook: Let the mixture cook over medium heat for about 15 minutes, stirring occasionally, until the leeks are tender but still have a slight bite.
  6. Season and serve: Taste and adjust with additional salt and pepper as needed, then serve.
